Today we celebrated the birthday of one of our co-workers. She and I have celebrated many birthdays together as we have been working together for at least 15 years.She was turning... well we won't go that far, but she was turning another year older. We decided to invite a few other girls and host the party in a Mexican theme. We made a 7-Layer Taco Salad 
and Outrageous Chicken Nacho Dip. The girls pitched in by bringing all the fixin's like sour cream, guacamole, black olives and salsa. YUM! YUM! We all know that no Mexican party would be complete without Margaritas, right?
So, I made us a platter, without the alcohol, of course and they looked so darlin' with the rest of the mexican decor. I made Jane a Slap Yo Mamma Cake which seems to be her favorite thing I make and you really might slap yo Mamma if she tried to take your piece of this cake. Yes, it is that good. It is one of those cakes you poke holes in and pour coconut cream over while it is still hot. Yeah, I know!
